At the basic level are the government sponsored Apprentice Programmes to develop sub-skill competencies to give youth the opportunity to get gainful employment in the industry. These programmes are statutory ranging to a maximum one and half years based on the skill. Students pass Class X and some at Class XII. Hotels are mandatorily required to hire apprentices.

The next level of institutions is the government sponsored Food Craft Institutes that prepare youth for skilled levels in the hotel industry. Some private hotel schools have these short courses now. Students are developed to hold positions as Receptionists, Waiters, Room Attendants and certain skills within the Kitchens. Programs typically have six months in the school and six month internships. They are also open to Class X students.

Then there are the popular Hotel Management Schools both government sponsored and private. Programmes are typically three to four years in duration based on the curriculum they follow and the accrediting association they have. Though called Hotel Management programmes many enter supervisory levels after a further one to two year finishing programmes in a hotel. A few are lucky to join Management Training Programmes of hotels. Students are prepared for hotel operations concerned with service delivery to customers. They would typically become Captains in restaurants, Floor Supervisors in Housekeeping, Front Office Supervisors, or Demi-Chef-de-parties in Kitchens after training.

Ecole Hoteliere Lavasa has created a new level that offers a 4-year undergraduate hospitality business programme to develop managers and entrepreneurs of the future. It is the only college that does so in India. It follows an international curriculum with academic certification of Ecole hôtelière de Lausanne, Switzerland, the oldest and most prestigious in the world. Students are expected to join directly into Management levels in the hospitality industry.
